I made this amazing soup yesterday using bits and pieces laying about the house. Thought I'd share.
1 lb ground beef
8 c water
8 Tbs beef bouillon (we used about 6 beef and 2 chicken)
1 c brown lentils
6 medium potatoes, cubed (we used red potatoes and they stayed together wonderfully)
1 can sweet peas, drained
1 c milk
shredded cheese, to garnish (optional)
In a large pot on med-high heat, fry ground beef until completely cooked. Push to the side and add lentils. Stir to coat lentils in beef grease and let heat until lentils are just beginning to color (2-3 min for me). Add potatoes, water and bouillon. Turn heat to high until water is boiling, then reduce to med-high and cover. Let cook 30 min, or until potatoes are done.
Add peas and milk, stir to combine. Let soup heat through again, then serve. Grate cheese over each portion if desired.
Ha ha, my filthy kitchen and bad photography = win.
It was super yummy. Wish we had more beef so we could make it again. :) We've been eating an insane amount of soup lately, like the corn chowder I made a few weeks ago and a less than impressive green bean soup I made before this recent success.
